Dough:
2 1/4 cups water

1 tablespoon salt

3 tablespoons brown sugar

3-4 1/2 cups all-purpose flour (start at 3 cups and if more is needed, slowly add the rest)

1 1/2 tablespoons instant yeast
.

Water Bath:
2-3 quarts water
.
4 tablespoons brown sugar
.

In a stand mixer add water, salt, 3 tablespoons brown sugar, about half of the flour, and the yeast on the top. Turn on mixer and add the rest of your flour slowly
.

Divide dough into 12 pieces and roll each into a ball. Cover the dough balls and let rest for 5 minutes
.

Once they’ve rested, use your thumb to gently poke a hole in the center (less time you β€œperfect your bagels” the better) – cover and let rise for 30 min
.
While bagels are rising, bring a pot of water to a boil with 4 tbsp of brown sugar (preheat your oven to 395)
.
After your bagels have rested, boil them in for 30 seconds on each side, add them to a tray (add any seasoning/ toppings that you’d like) and bake them for 20 min:)

  1. In your tiktok you said 3 cups flour… for the water bath you had 3 tbps brown sugar. Temperature 390 for 20 mins. So which recipe should I follow if I like soft and moist bagels? Thanks

My husbands unit (in the army) all are obsessed with them. I used to bake all the time (I took Culinary Arts in High School), but I stopped for lack of motivation and discouragement. I have tried all kinds of your recipes and they have brought me back to feeling good when I bake. Thank you so much for taking the time to share your recipes. They have been helping me focus on something more positive lately. I now make bagels almost twice a week ❀️
